Description
Don't chicken out on trying this! Crispy chicken schnitzel and a rich, savoury Japanese curry make the ultimate comforting meal.
Method
- Preheat the air fryer at 180°C for 5 minutes. Cook chicken for 20 minutes until cooked through.
- Meanwhile, heat oil in a frying pan over medium heat. Add carrot, potato, onion and garlic, and sauté for 5 minutes. Add 2 cups water. Bring to a boil, then cover with lid and simmer for 5 minutes or until potato begins to soften.
- Remove from heat and crumble in curry mixture. Stir until nearly dissolved. Return to a low heat and cook for 2–3 minutes or until the sauce is smooth.
- Cook rice according to packet instructions. Slice chicken into thick strips. Divide rice between serving bowls. Top with curry mixture and chicken. Serve sprinkled with coriander.
